Standardize the proof of general Stein factorization

The proof as given before was too tricked. Now we prove it by just
relying on very standard results on limits of schemes, thereby reducing
more directly to the Noetherian case. No tricks!

Whitespace changes

LaTeX: fix colim

	Introduced the macro

	\def\colim{\mathop{\rm colim}\nolimits}

	and changed all the occurences of \text{colim} into \colim.

LaTeX: fix lim

	Replaced all the occurences of \text{lim} by \lim or
	\lim\nolimits depending on whether the invocation occured in
	display math or not.

Global: structural replaced by structure

	If X is a scheme over S then the cooresponding morphism X --> S
	will be called the structure morphism of X over S
