Weak normalization; seminormalization
There are many variants we could consider here. For example, one could
consider a category of pairs (R, T) where R is a ring and T is a subset
of its spectrum and look at universal homeomorphisms R ---> S which
induce isomorphisms at residue fields for primes in T. Then I wouldn't
be surprised if you could carry everything through for these...
Another example is to look at rings over Z_{(p)} and consider universal
homeomorphisms R ---> S inducing an isomorphism R[1/p] ---> S[1/p]. This
sometimes comes up when considering rings of invariants.
Etc, etc, etc.
